Introduction

Gnocchi, those delightful little potato dumplings, are a beloved Italian comfort food that never fails to bring a smile to your face. In this recipe, we'll show you how to make Nonna's famous pillow-soft gnocchi that will melt in your mouth. And the best part? They're gluten-free!

  1. Start by baking the potatoes in the oven until they're fork-tender. This will take about an hour at 400°F.

  2. Once the potatoes are cooked, peel off the skins and mash them in a large bowl until they're smooth.

  3. Add the salt, pepper, and beaten egg to the mashed potatoes and mix well. Then gradually stir in the gluten-free flour until a dough forms.

  4. On a floured surface, roll out the dough into long ropes, about 1 inch thick. Cut the ropes into small pillow-shaped gnocchi pieces.

  5. Bring a large pot of salted water to a boil and add the gnocchi in batches. Cook until they float to the surface, then remove them with a slotted spoon.

  6. If desired, sprinkle the cooked gnocchi with grated Parmesan cheese and serve with your favorite sauce.
