Mediterranean Delight: Gluten-free Stuffed Grape Leaves

Introduction

Ingredients
- 1 cup of rice
- 1/2 cup of pine nuts
- 1/2 cup of raisins
- 1/4 cup of fresh dill, chopped
- 1/4 cup of fresh mint, chopped
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of extra virgin olive oil
- 1/4 cup of lemon juice
- Salt and pepper to taste
- 1 jar of grape leaves, rinsed
Instructions
- In a large bowl, combine the rice, pine nuts, raisins, dill, mint, parsley, olive oil, lemon juice, salt, and pepper. Mix well to combine all the flavors.
- Take one grape leaf at a time and place it flat on a clean surface. Add a spoonful of the rice mixture in the center of the leaf.
- Fold the sides of the leaf over the rice mixture, then roll it up tightly like a burrito.
- Continue filling and rolling the grape leaves until all the rice mixture is used up.
- Place the stuffed grape leaves in a large pot, seam side down, and drizzle with a little more olive oil and lemon juice.
- Add enough water to the pot to just cover the grape leaves. Place a plate on top of the grape leaves to weigh them down and prevent them from unraveling during cooking.
- Bring the water to a boil, then reduce the heat to low and simmer for about 45 minutes, or until the rice is cooked and the grape leaves are tender.
- Once cooked, remove the grape leaves from the pot and let them cool slightly before serving.
