Ingredients
- 8 ounces gluten-free penne pasta
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, halved
- 1/2 cup sliced black olives
- 1/4 cup pine nuts, toasted
- 2 cups fresh basil leaves
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic
- 1/4 cup extra-virgin olive oil
- Salt and pepper, to taste
Instructions
- Cook the gluten-free penne pasta according to the package instructions. Drain and rinse with cold water.
- In a large bowl, combine the cooked pasta, cherry tomatoes, mozzarella balls, black olives, and toasted pine nuts.
- In a blender or food processor, combine the fresh basil leaves, grated Parmesan cheese, garlic, and extra-virgin olive oil. Blend until smooth.
- Pour the pesto sauce over the pasta salad and toss until well coated. Season with salt and pepper to taste.
- Refrigerate the pasta salad for at least 1 hour to allow the flavors to meld together.
