Bite-sized Joy: Gluten-free Mini Margherita Pizzas

Ingredients
- 1 cup gluten-free flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/2 cup Greek yogurt
- 1/2 cup tomato sauce
- 1 cup fresh mozzarella, sliced
- Fresh basil leaves
- Olive oil
- Salt and pepper
Instructions
- Preheat your oven to 450°F.
- In a bowl, mix the gluten-free flour, salt, and baking powder together.
- Add the Greek yogurt to the dry ingredients and stir until a dough forms.
- Roll out the dough on a floured surface and cut out small circles using a cookie cutter.
- Place the mini pizza crusts on a baking sheet lined with parchment paper.
- Spread a spoonful of tomato sauce on each crust.
- Top with slices of fresh mozzarella.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with fresh basil leaves.
- Drizzle with olive oil and season with salt and pepper.
